3/4cup (125g)Dried chickpeas or one 15-ounce can of chickpeas
1tspBaking soda
1/2cupTahini
1Lemon
4 clovesGarlic
1/2tspGround cumin
1/2tspSalt
6tbspIce water
2tbspExtra Virgin Olive Oil

Instructions
Prepare chickpeas
If you are using dried chickpeas
Put chickpeas in a large bowl and cover with cold water, soak at least 6 hours to overnight.Drain chickpeas and put in a medium saucepan, add baking soda and cook for couple minutes over high heat, stirring constantly. Add 4 cups water and bring to a boil. Cook for 30 to 40 minutes over medium-low heat, skimming off any foam and any skins that float to the surface.Drain the chickpeas and rinse with cool water, discard skins.
If you are using can of chickpeas
To more soften chickpeas and remove skin, put drained chickpeas in a sauce pan and cover with cold water and baking soda, boil for 5 minutes.Drain the chickpeas and rinse with cool water, discard skins.
To make hummus
Place chickpeas in a food processor and process until becomes stiff paste.
Add tahini paste, lemon juice, garlic, cumin and salt and process until thick and pretty smooth for 1 to 2 minutes. Drizzle in ice water 1 table spoon at a time and mix for couple minutes until it becomes super smooth and creamy texture.
Serve hummus with a drizzle of extra virgin olive oil and dash of paprika or sumac.
