Béchamel sauce
60g(4 tbsp)Butter
60g(4 tbsp)Flour
500ml(2 cups)Milk

牛挽肉350g
玉ねぎ小1個みじん切り
にんにく2片みじん切り

トマトペースト大さじ1

バター60g
小麦粉60g
牛乳500ml
卵黄2個
パルメザンチーズ60g
ナツメグ小さじ 1/4
塩胡椒少々
Instructions
Preheat oven to 350°F (180℃)
Peel and slice potatoes and sliced eggplant, mix in a bowl with salt, pepper, thyme and olive oil. Single layer on baking sheet and bake for 20 minutes.
To make meat sauce
Heat olive oil in a pan over high heat, add chopped onion and cook for couple minutes. Add chopped garlic, parsley, ground beef, salt and pepper, break it up and sauté until golden brown.
Stir in cinnamon and clove, add tomato paste and sauté for 1 minute. Add red wine and cook until the liquid is reduced in half. Add tomatoes and lower the heat to simmer, cook for 15-20 minutes until the sauce is thickened.
To make béchamel sauce
Melt butter in a sauce pan over medium heat, add flour and stir, cook about 1 minute.
Slowly add the milk and stir constantly, cook about 4-5 minutes until it thickens.
Remove from the heat and whisk in nutmeg, parmesan. Cool down for couple minutes, then whisk in egg yolks.
To assemble
In a 9x9"(23cmx23cm) Baking pan, layer potato, half of egg plant, meat sauce, remaining egg plant and béchamel sauce on the top.Bake for 30 - 40 minutes or until golden. Allow them to cool for one hour before serving.
