1/2Dijon Mustard
1tbspWhite wine vinegar or rice wine vinegar
1tspLemon juice
1cup(240ml)Light-flavored olive oil such as Avocado oil

Instructions
Using the container that Immersion blender just fits, add all ingredients in a jar, oil is the last one.
Place head of immersion blender at bottom of cup and turn it on high speed and blend for 10 seconds.Once the mayonnaise starts to thicken, slowly move the blender up and down until fully combine the ingredients for 1 minutes.Once it's all blended, taste the mayonnaise and adjust with additional salt, vinegar or lemon juice if necessary.Storage container in the refrigerator up to one week.
If you want to have longer shelf life, you can use ferment mayonnaise using apple cider vinegar instead. Leave mayonnaise on a counter overnight to ferment before keeping it in refrigerator.
