Instructions
To Cook Bulgur
To cook in rice cookerPlace 1 cup bulgur wheat, 1 1/2 cup water, salt and olive oil in the bowl of your rice cooker, cook as regular rice. When it's done, fluff it with a fork.To cook on the stovetopPlace 1 cup bulgur wheat, 2 cup water, salt and olive oil into a sauce pan. Bring to a boil, then cover and cook over low heat about 10-12 minutes until most of the liquid is absorbed. Turn off the heat and let it sit for 5 minutes and fluff with a fork.
To Roast Cauliflower
Preheat the oven at 425℉ (218℃)
Toss the cauliflower, bell pepper and onion with spice and oil in a bowl.Transfer to the baking sheet, spread into a single layer. Roast about 15-20 minutes until tender and golden.
To make salad
In a large bowl, place cooked bulgur, roasted cauliflower, cilantro, lime juice and oil. Mix well and serve it warm or cold.
