- 4 Organic Lemon Washed well and and quartered
- 1 cup Kosher salt
- 1 cup Sugar

In a large bowl, mix the salt and sugar.
Quarter a lemon but leaving the uncut end intact. Open the lemon and pour some salt-sugar inside.
Pour a layer of salt-sugar into the bottom of the jar, layer the lemons in the jar, covering them with the sugar-salt as you go. Continue process with the remaining lemons.
Refrigerate the lemons for at least 3 weeks but they are best after 3 months and will keep for up to one year.To use, rinse the lemons well and use the peel only.
