Instructions
For the Pumpkin Spice Cupcakes
Preheat the oven to 350°F (177°C). Line a 12-cup muffin pan with cupcake liners
Sift together flour, baking powder, baking soda, pumpkin pie spice, cinnamon and salt in a large bowl. Set aside.
In another bowl, whisk together oil, brown sugar, egg, pumpkin puree, sour cream and vanilla until combined.
Pour the wet ingredients into the flour mixture and whisk until completely combined.
Pour the batter into the liners, fill the paper liners three-quarters full.
Bake for 20-22 minutes, or until a toothpick inserted in the center comes out clean.
Let cool in the pan for 10 minutes. Remove and finish cooling on a wire rack before frosting.
For the Cream Cheese Frosting
In the bowl of a stand mixer fitted with the paddle attachment, beat the cream cheese and butter together on high speed until creamy.Stopping to scrape down the sides of the bowl a few times
Add powder sugar, pumpkin spice, vanilla extract and beat together until light and fluffy. Place frosting in a piping bag and frost your cupcake as you like.
