120ml1/2 cupBoiling hot water
60ml1/4 cupCold water
For the paste

1/4cupOil (Vegetable Oil, Lard, Chicken Fat)

Instructions
To make the dough
If you are using food processor, Place flour and salt in a of food processor. While processor is running, slowly drizzle in boiling water and process for 20 seconds. Then slowly drizzle cold water and process until the dough comes together.Transfer to a work surface and knead a few minutes until it becomes a smooth ball. Cover with a plastic warp tightly and rest for 30 minutes at room temperature(You can make ahead night before and keep in the fridge overnight).If you are kneading by hand,In a large bowl, add flour and salt and mix well. Slowly add boiling hot water while stirring flour with a wooden spoon or chopsticks. Once the flour absorbed hot water, slowly add the cold water while continuing mixing.Using your hand, press and gather the dough until all comes together. Cover the dough and rest for 10 minutes and knead the dough for 5 minutes until the smooth surface. Cover with a plastic warp tightly and rest for 30 minutes at room temperature
Heat the oil in a pan and place the flour in a bowl. Pour warmed oil into the bowl and mix well.鍋で油を温めてから小麦粉を入れたボールに注いで馴染むまでよくかき混ぜておきます。
To Form the pancakes - 成形の仕方
Divide dough into six even pieces and shape each into a smooth ball. Roll out thinly into a rectangle shape on a lightly floured surface. 生地を6等分にして丸めて、綿棒で薄く広げて四角形に伸ばします。
Using a pastry brush, spread the paste over the dough. ハケを使って生地の上にペーストを全体に塗ります。
Add the green onion and roll up like a jelly roll.青ネギを散らしてお寿司を撒くように巻いていきます。
Then roll up like a spiral and tuck the end underneath. 渦巻きのように巻いて端を生地の下に収めます。
Flatten gently by hand and remove ant air bubble.手で押しながら広げてなかの空気を押し出します。
Roll out the dough into a 7-inch(18cm) disk using rolling pin.生地を綿棒で18cmくらいの円に伸ばします。
To cook pancake - 調理の仕方
Heat oil in a pan over medium-high heat. Place the pancake and cook about 2 minutes until golden. Flip and cook for about 2 minutes until second side is golden brown as well.Transfer to a plate and cut into 6 wedges. Serve immediately with dipping sauce.For a quick dipping sauce, mix together 1 tablespoon soy sauce, 1 tablespoon rice wine vinegar, 1 teaspoon of chili oil and a few scallion slices.フライパンにオイルを引いで中強火であたためてから両サイドを2分位ずつこんがりするまで焼きます。出来上がりにパンケーキをクシュってしてサクサクの食感に仕上げます。6等分にしてお皿に盛り付けして、つけだれを添えてどうぞ。
